Gluten-Free Chocolate Oatmeal Cookies
These are my oldest son’s all-time favorite cookies … and I love them too! When I was first diagnosed with Celiac, I removed oats from my diet per the recommendation of my physician in order to see if I was intolerant to them as well. The problem is, I LOVE OATS. After two years, I reintroduced them and I tolerate them well. And so, I made these with gluten-free oats and they turned out amazing.
Ingredients
- 2 cups sugar
- 1 stick butter
- ¼ cup cocoa
- ½ cup milk
- 1 teaspoon vanilla
- 3 cups GF oatmeal
- ½ cup peanut butter
Instructions
- Combine sugar, butter, cocoa, and milk in a large saucepan.
- Bring to boil, stirring occasionally.
- Let boil for 2 minutes, stirring constantly.
- Remove from heat; add remaining ingredients, mix well.
- Spread out a sheet of parchment paper.
- Using a spoon, drop piles of mixture onto parchment paper.
- Let cool for 20-30 minutes before serving.
