Gluten-Free Chocolate Chip Cookies

There are many recipes for gluten-free cookies, but none, not a single one compare to this. But there is no room for substitutions here like almond flour or “gluten-free flour of your choice” in this recipe. The ingredients and instructions are specific but if you follow them to the TEE, you will have made the most amazing gluten-free cookies. Chewy, delicious, and completely addicting!

Ingredients

  • 1/2 cup butter, softened naturally (DO NOT microwave!)
  • 2 cups brown sugar
  • 2 eggs
  • 1 1/2tsp vanilla
  • 2 1/2 cup gluten-free flour (for perfect cookies it must be Cup 4 Cup)
  • 1 1/2 teaspoons baking soda
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (325°F convection bake)
  2. Cream together butter and sugar. 
  3. Add eggs, one at a time, mix very briefly. 
  4. Add vanilla. 
  5. In a separate bowl, mix together flour and baking soda.  
  6. Slowly add flour mixture to sugar mixture. 
  7. Stir in chocolate chips. 
  8. Scoop onto a baking sheet lined with parchment paper.
  9. Bake for 9 minutes.
