Gluten-Free Black Bean Brownies
No matter if you are gluten-free or if you just love brownies, this is an easy healthy alternative to other brownie recipes. Because they are rich in flavor, pairing them with a scoop of vanilla ice cream or frozen yogurt is wonderful. You’ll be singing after you try this recipe, but hopefully not singing:

Ingredients
- 1 (15 oz) can black beans, rinsed
- 1 pinch salt
- 1 egg + 2 egg whites
- 2 teaspoon vanilla extract
- ½ cup unsweetened applesauce
- ¾ cup white sugar
- ¼ cup cocoa powder
- 2 teaspoon instant coffee
- 1 teaspoon baking powder
- ½ cup milk or semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F.
- Lightly grease an 8×8 inch square baking dish.
- Combine all ingredients except chocolate chips in a blender; blend until smooth.
- Pour the mixture into the prepared baking dish.
- Sprinkle with chocolate chips.
- Bake until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.
