Gluten-Free Black Bean Brownies

No matter if you are gluten-free or if you just love brownies, this is an easy healthy alternative to other brownie recipes. Because they are rich in flavor, pairing them with a scoop of vanilla ice cream or frozen yogurt is wonderful. You’ll be singing after you try this recipe, but hopefully not singing:

“Beans, beans, the magical fruit

The more you eat, the more you toot,

The more you toot, the better you feel

So let’s have beans for every meal!”

Ingredients

  • 1 (15 oz) can black beans, rinsed
  • 1 pinch salt
  • 1 egg + 2 egg whites
  • 2 teaspoon vanilla extract
  • ½ cup unsweetened applesauce
  • ¾ cup white sugar
  • ¼ cup cocoa powder
  • 2 teaspoon instant coffee
  • 1 teaspoon baking powder
  • ½ cup milk or semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F.
  2. Lightly grease an 8×8 inch square baking dish.
  3. Combine all ingredients except chocolate chips in a blender; blend until smooth.
  4. Pour the mixture into the prepared baking dish.
  5. Sprinkle with chocolate chips.
  6. Bake until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.
