Gluten-Free (Healthy) Banana Pancakes
These delightful pancakes will thrill your tastebuds and energize your body! They are delicious plain or with a side of yogurt or berries.
Ingredients
- 1 ripe or overripe banana
- 1 large egg
- 1 egg white
- pecans and/or flax meal(if desired)
- yogurt or berries (optional)
Instructions
- Mash the banana in a bowl (I use a potato masher).
- Add egg and egg white; continue mashing until almost completely smooth (may be a little lumpy).
- Heat a griddle and spray with GF non-stick spray (I use olive oil).
- Scoop the batter onto the hot griddle – a bit less than 1/4 cup per pancake.
- Add nuts or flax meal if desired.
- Cook over medium-low heat for 2-3 minutes or until lightly golden brown. Check the underside but lifting edge with a spatula sprayed with non-stick spray. When the underside is golden, quickly slide the pancake flipper under the pancake and flip gently but quickly.
- Cook until golden on both sides.
- Remove to plate and serve immediately.
- Since these are already very moist, they taste great without syrup but sometimes I serve them with yogurt or smashed fruit.
