Gluten-Free Monster Cookie Bars

These chocolatey, chewy, peanut-buttery bars are a family-pleasing favorite! They are super easy to make – grab the littles and have fun making these gooey, colorful treats!

Ingredients

  • 2 eggs
  • ¾ cup sugar
  • ½ cup brown sugar
  • ¼ teaspoon salt
  • 1 ½ teaspoons pure vanilla extract
  • 1 cup creamy peanut butter
  • 2 ½ tablespoons butter, softened
  • 1 ½ teaspoons baking soda
  • 9 ounces gluten-free rolled oats (not quick oats)
  • ½ cup M&Ms
  • ¼ cup semisweet chocolate chips
  • ¼ cup peanut butter chips

Instructions

  1. Preheat oven to 325° (or 300° convection).
  2. Spray 9” x 13” pan with non-stick baking spray.
  3. Using an electric mixer, combine eggs and sugars until creamy.
  4. Add salt, vanilla, peanut butter, butter, and baking soda and mix until smooth.
  5. Stir in the oats.
  6. Add M&Ms, chocolate chips, and peanut butter chips and stir until well combined.
  7. Spread the batter into the prepared pan.
  8. Cover with aluminum foil for 25 minutes.
  9. Remove foil and bake an additional 5 minutes or until lightly browned.
  10. Cool before cutting and serving.
