Gluten-Free Parmesan Encrusted Cauliflower

Are you ready for your new favorite cauliflower recipe? Well, here it is and it makes a great side for any main dish, including pork, beef, chicken, or fish. What makes this different from other cauliflower dishes is the great crunch you get with the gluten-free breadcrumbs!

Ingredients

  • 1 large head of cauliflower, cut into small florets
  • 1½ tablespoon olive oil + olive oil spray
  • ¾ cup breadcrumbs (I use 4C gluten-free plain breadcrumbs)
  • ½ cup parmesan cheese, grated
  • ¾ teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 tablespoon parsley flakes
  • ¾ teaspoon salt

Instructions

  1. Preheat oven to 400° F convect bake (or 425° bake).
  2. Put parchment paper on a baking sheet and spray with olive oil spray.
  3. Add cauliflower florets to a large bowl and drizzle with olive oil, toss to coat.
  4. In a small bowl, mix together breadcrumbs, parmesan cheese, garlic powder, paprika, parsley, and salt.
  5. Pour crumb mixture over cauliflower; toss to coat.
  6. Spread cauliflower evenly on baking sheet, sprinkling any leftover crumb mixture from the bottom of the bowl.
  7. Spray top with olive oil spray.
  8. Bake for 15 minutes.
  9. Flip cauliflower with a spatula and bake an additional 10-15 minutes until golden and fork-tender.
  10. Serve hot.
