Gluten-Free Parmesan Encrusted Cauliflower
Are you ready for your new favorite cauliflower recipe? Well, here it is and it makes a great side for any main dish, including pork, beef, chicken, or fish. What makes this different from other cauliflower dishes is the great crunch you get with the gluten-free breadcrumbs!
Ingredients
- 1 large head of cauliflower, cut into small florets
- 1½ tablespoon olive oil + olive oil spray
- ¾ cup breadcrumbs (I use 4C gluten-free plain breadcrumbs)
- ½ cup parmesan cheese, grated
- ¾ teaspoon garlic powder
- ½ teaspoon paprika
- 1 tablespoon parsley flakes
- ¾ teaspoon salt
Instructions
- Preheat oven to 400° F convect bake (or 425° bake).
- Put parchment paper on a baking sheet and spray with olive oil spray.
- Add cauliflower florets to a large bowl and drizzle with olive oil, toss to coat.
- In a small bowl, mix together breadcrumbs, parmesan cheese, garlic powder, paprika, parsley, and salt.
- Pour crumb mixture over cauliflower; toss to coat.
- Spread cauliflower evenly on baking sheet, sprinkling any leftover crumb mixture from the bottom of the bowl.
- Spray top with olive oil spray.
- Bake for 15 minutes.
- Flip cauliflower with a spatula and bake an additional 10-15 minutes until golden and fork-tender.
- Serve hot.
