Gluten-Free Sweet Chex Mix

Warning – this treat is very addicting! It’s great any time of year but makes for an especially fun treat on a road trip. We also enjoy these yummy candy clumps during any holiday – just change out the M&M colors to coordinate with the holiday you are celebrating!

Ingredients

  • 1 box Chex cereal, regular size
  • 1 bag of gluten-free pretzels
  • 1 bag of M&M’s, large bag (10 oz)
  • 1 jar dry roasted peanuts, (or another nut variety–optional) 
  • 1 cup butter
  •  2 cups brown sugar
  • ½ cup Karo syrup

Instructions

  1. Preheat over to 350°F bake.
  2. Spread parchment paper onto the countertop. I use 2 pieces – about 3 feet each and overlap them width-wise. 
  3. Spray a large deep roasting pan with nonstick cooking spray.
  4. Pour cereal, pretzels, M&Ms, and peanuts into the roasting pan. 
  5. Heat butter over medium heat until melted. 
  6. Add brown sugar and Karo syrup; stir until sugar is dissolved. 
  7. Bring to a boil for 90 seconds.  
  8. Remove from heat and pour over the dry ingredients.  
  9. Bake uncovered for 8 minutes.
  10. Gently stir and bake for an additional 8 minutes.   
  11. Pour over parchment paper and spread it out some.
  12. Let cool and then pour into a bowl for many to share or package into bags as gifts for friends to enjoy!
