Gluten-Free Strawberry Pie
This lightly baked gluten-free crust coupled with a sweet strawberry gel will melt in your mouth. Your family will love it and they will flock to your kitchen for seconds!
Ingredients
- 3 pints strawberries
- 2 cups Cup 4 Cup gluten-free flour
- ¾ cup softened butter
- 2 tablespoons sugar
- 3 tablespoons cornstarch
- 1½ cups cold water
- 1½ cups sugar
- 1 package (3oz) Strawberry Jell-O
- 3 tablespoons butter
- 1 teaspoon vanilla
- Red food coloring (optional)
Instructions
- Preheat oven to 350°.
- Cut and clean strawberries and set aside.
- Using a pastry blender or fork cut together flour, ¾ cup butter, and 2 tablespoons sugar.
- Pat flour mixture into a 9” x 13” baking dish.
- Bake for 10-15 minutes or until lightly browned, do not overcook.
- Let cool.
- In a saucepan, mix together cornstarch, water, and 1 ½ cups sugar.
- Simmer until thick and clear.
- Remove from heat; add remaining ingredients.
- Stir until well mixed and let cool.
- When the glaze is cool to the touch, pour it over the strawberries.
- Pour the berry mixture over the crust.
- Chill until set, at least 2 hours.
- Serve with whipped cream if desired.
