Gluten-Free Strawberry Pie

This lightly baked gluten-free crust coupled with a sweet strawberry gel will melt in your mouth. Your family will love it and they will flock to your kitchen for seconds!

Ingredients

  • 3 pints strawberries
  • 2 cups Cup 4 Cup gluten-free flour 
  • ¾ cup softened butter
  • 2 tablespoons sugar
  • 3 tablespoons cornstarch
  • 1½ cups cold water
  • 1½ cups sugar 
  • 1 package (3oz) Strawberry Jell-O
  • 3 tablespoons butter
  • 1 teaspoon vanilla
  • Red food coloring (optional)

Instructions

  1. Preheat oven to 350°.
  2. Cut and clean strawberries and set aside.
  3. Using a pastry blender or fork cut together flour, ¾ cup butter, and 2 tablespoons sugar.  
  4. Pat flour mixture into a 9” x 13” baking dish.  
  5. Bake for 10-15 minutes or until lightly browned, do not overcook.  
  6. Let cool.
  7. In a saucepan, mix together cornstarch, water, and 1 ½ cups sugar. 
  8. Simmer until thick and clear.  
  9. Remove from heat; add remaining ingredients.  
  10. Stir until well mixed and let cool.  
  11. When the glaze is cool to the touch, pour it over the strawberries.  
  12. Pour the berry mixture over the crust.  
  13. Chill until set, at least 2 hours.
  14. Serve with whipped cream if desired.
